Readers!
I am writing to you with a
reflection on my past week working on my Genius Hour. I am really happy to
report that I feel like I’ve been having a great week putting all my learnings
and advice to the test! I’ve been very successful with my grocery shopping
habits and meal planning! A big testament to my success with meal planning has
been utilizing my slow cooker at home. Over the past week I have made both a
beef and bean chili and chicken noodle soup in my slow cooker! Well, I should
give the credit of the chicken noodle soup to my boyfriend, he manned that
operation while I was at school, but I certainly got to reap the benefits!
Having made the beef and
bean chili on Sunday, I had dinner that evening but also had enough leftovers
to bring to work on Monday, and have a lunch at school on Tuesday and Thursday
when I needed it! Also having the chicken noodle soup as an option was great
for an easy, light lunch. That is the first time I have ever had soup out of a
slow cooker and the first time my boyfriend had ever made it. Let me tell you,
it was phenomenal! He had lots of chicken, onion, celery, carrots, spices and
egg noodles packed into a hearty soup! It tasted great and it is so much
healthier for you than canned soup! We were pretty proud of our meal prepping
that week!
